Critical Observed that the dish machine sanitizer line had broken. The facility switched to manual warewashing. Per the PIC the dish machine had broken this morning. The facility shall properly wash, rinse, and sanitize its food contact surfaces. REPAIR DISH MACHINE SO THAT IT IS WORKING PROPERLY AND ENSURE THAT DISHES ARE BEING PROPERLY SANITIZED.

PIC- Carlos At the time of inspection the dish machine had not been repaired. The inspector was present right as the facility opened, so dishes were not currently being cleaned. The inspector discussed with the employees that they will need to continue to hand wash the dishes until the dish machine can be properly repaired. |
