Critical Employee did not wash their hands for at least 20 seconds. Ensure all employees wash their hands for at least 20 seconds before rinsing off their hands, dry them, and turn off the water with a paper towel.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Cut lettuce and tomato in cold holding were not date marked. Ensure all ready-to-eat, refrigerated time/temperature controlled for safety (TCS) foods are date marked and discarded after a maximum of seven days (including the date cut or opened), and that the style of date marking is consistent.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Repeat Gaskets on doors to coolers containing Coke, Frostie, and Monster products are damaged and need to be repaired or replaced to ensure an appropriate seal between door and cooling unit.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Microwave in the food prep area had food debris, especially on the ceiling, and needs to be maintained clean to sight and touch.

3717-1-05.4(N) / Covering receptacles.
Dumpster lid was open during inspection. Ensure dumpster lid is kept closed when not in use.
