[?] A summary of the violations found during the inspection are listed below.

3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Equipment: Hot holding trays observed stained and do not appear to be easily cleanable. Replace trays that are stained and no longer easy to clean. Observed hard to reach areas of hot holding wells with buildup of debris. Clean food equipment of debris to prevent such accumulation. Areas of fryers, sides, and hard to reach area, hood vents, and other hard to reach areas of fryers have build up of grease.
To prevent contamination, equipment food-contact surfaces and non food contact surfaces shall be clean to sight and touch.

3717-1-05.4(N) / Covering receptacles.
Grease receptacle outside is uncovered and exposed to rain water. .
Keep all waste receptacles covered when not in use. Remove grease routinely.
3717-1-05.4(P) / Maintaining refuse areas and enclosures.
Dumpster area has grease and debris accumulation on ground. Clean routinely. Dumpster.
Dumpster areas shall be kept clean to prevent nuisance conditions.
3717-1-06.4(A) / Repairing.
Observed damaged wall behind water heater, drive thru beverage line, under prep sink, observed floor tile and coving missing in some areas of kitchen. Observed areas where grout is thin and debris accumlating between floor tile. Repair all areas to provide a durable, easy to clean surface.
The physical facilities shall be maintained in good repair.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Repeat Hard to reach areas of floor and walls around drive thru, under line equipment, near fryers are dirty with food debris and residue. Clean all walls, floors, and ceilings routinely to prevent accumulation of debris.
The physical facilities shall be cleaned as often as necessary to keep them clean.

Discussed that some of the facilities are old and are in need of permanent repairs or replacement. Operation and facility is nearing time for complete repairs of floors, walls, and coving if they can not be maintained in good repair.
