3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Observed food that was not properly protected from contamination by separation, packaging, and segregation. Observed pepperoni and sausage tubsin wal kin freezer being stored uncovered. Cover items in storage to prevent contamination
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule.
3717-1-03.4(F)(1) / Time/temperature controlled for safety food - hot and cold holding.
Critical Corrected During Inspection TCS foods were not being held at the proper temperature. Observed Salad prep cooler holding items at 45-49 degrees. Cooler temped at 50 degrees. Employee located ice build up causing unit not to work properly.
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less.
3717-1-06.4(E) / Cleaning maintenance tools - preventing contamination.
Critical Observed a food prep sink, handwashing sink, or warewashing sink being used for the cleaning or storing of maintenance tools, or disposal of mop water. Prep sink is for food preparation only. Mop water is not to be disposed of in prep sink.
To prevent contamination, food preparation sinks, handwashing sinks, and warewashing equipment may not be used for the cleaning of maintenance tools, the preparation or holding of maintenance materials, or the disposal of mop water and similar liquid wastes.
3717-1-07(B) / Working containers - common name.
Critical Repeat Observed working containers of poisonous or toxic chemicals in storage room and bar area that were not properly labeled with the name of the material.
To prevent health hazards, working containers used for poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material.

3717-1-05.1(S)(2) / Plumbing system - maintained in good repair.
The plumbing system was not properly maintained. Drain in mop bucket not operating properly and in need of repair.
A plumbing system shall be properly maintained.
3717-1-06.2(E) / Handwashing signage.
Repeat Observed no handwashing sign(s) posted at handwashing sink(s) used by employees.
A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees.
