3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Dish machine has been inoperable for 6 weeks according to food service manager. Stated repair delays due to parts needed. Currently using single service plates, cups, utensils. Pots and pans being washed rinsed and sanitized at 3 comp. sink. The door seal on cooler #8 needs repaired or replaced. Walk in freezer #1 and walk in cooler #5 are not working.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.

Food service manager certified in food safety. Observed hat and beard snoods. Inmate clothing acceptable. Observed hand washing by food employees. Questions regarding food preparation occurring at time of inspection were answered correctly. Food thermometers available. Thermometers in coolers / freezers. Per discussion, pest control is completed weekly. Trash removal is weekly and rumpke is to bring a clean and sanitized dumpster. If dumpster is not cleaned and sanitized, Rumpke brings a different one to meet contract. Most of the food waste is recycled at PCI.
