3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. At time of inspection, observed food being stored under leaking condesner in walk in freezer. Make sure all food is protected from sources of contamination. Water from condenser is not potable clean water. Food was discarded and baking tray was added to shelving to catch leaking water.

Critical Chlorine sanitizing solution at incorrect temperature and/or concentration. Observed dishtank was not dispensing sanitizer. Make sure dishtank is always dispensing at least 100ppm of chlorine. Dishtank was decommissioned, facility must use 3 compartment sink for dishes. Dishtank is to be repaired.

Critical Repeat Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed several containers of reday to eat TCS foods without a datemark. All RTE TCS foods must have a 7 day datemark. Food was discarded.

Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed several containers of RTE TCS foods being held past datemark expiration date. All TCS RTE foods must be used or discarded by the end of the 7 day datemark. Food was discarded.

Non-food contact surface(s) not cleaned at the required frequency. Observed racks in walk in cooler with build up of debris and dust. All surfaces must be cleaned at a frequency that prevents build up of debris.
