[?] A summary of the violations found during the inspection are listed below.

3717-1-04.1(C) / Food-contact surfaces - cleanability
Critical Observed prince castle trays in the hot holding unit that had a large amount of food debris burnt into the bottom. This food debris prevents proper cleaning of these utensils. REPLACE SOILED/DAMAGED TRAYS SO THEY ARE SMOOTH, EASILY CLEANABLE, and DO NOT HAVE ANY CRACKS, DAMAGE, or DEBRIS.
To prevent the growth of pathogens, Multiuse food-contact surfaces shall be: (1) Smooth; (2) Free of breaks, open seams, cracks, chips, inclusions, pits, and similar imperfections; (3) Free of sharp internal angles, corners, and crevices; (4) Finished to have smooth welds and joints; and (5) Except for cooking oil storage tanks, distribution lines for cooking oils, or beverage syrup lines or tubes; accessible for cleaning and inspection by one of the following methods: (a) Without being disassembled; (b) By disassembling without the use of tools; or (c) by easy disassembling with the use of handheld tools commonly available to maintenance and cleaning personnel such as screwdrivers, pliers, open-end wrenches, and Allen wrenches.
3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Observed an ice bucket and an ice scoop that were stored in a pan/tray that had yeast growth. At the time of inspection these items were taken for cleaning prior to use. The facilty MUST clean food contact surfaces thoroughly and often to prevent any debris build up. For ice scoops the utensils should be properly washed, rinsed, and sanitized at least once every 24 hours. Observed some debris build up on the handle for the hamburger tongs near the chest freezer. Food contact surfaces of TCS foods shall be properly washed, rinsed, and sanitized at least once every 4 hours to prevent build up.
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch.

3717-1-03.2(D) / Food storage containers - identified with common name of food.
Repeat Observed containers of cornmeal, bread crumbs, etc. that were not labeled. Label all food that are not easily distinguishable to prevent them from being misused.
Working containers holding food or food ingredients that are removed from their original packages shall be identified with the common name of the food, except containers holding food that are readily and unmistakably recognized.
3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Observed some food items stored on the floor of the walk in freezer. Store foods at least 6 inches off of the ground to prevent any contamination from splashing or spilling.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor.
3717-1-03.2(T) / Food preparation - preventing contamination from the premises
Observed foods stored in the walk in freezer that were left uncovered. Cover foods with saran wrap, lids, or otherwise closing the top of the bag to prevent any dust or debris from falling into the foods.

3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Observed ice building up under the condenser in the walk in freezer. The facility has trays catching the ice to prevent damage to any foods. REPAIR THE WALK IN FREEZER TO PREVENT FURTHER DAMAGE TO THE SYSTEM AND PREVENT DAMAGING FOODS DUE TO ICE. Observed that the grill was not properly draining the grease causing it to drop on the floor behind the grill and underneath the trap. Repair or replace equipment to help with general cleanliness.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Observed walk in cooler and walk in freezer door seals were damaged. Replace damaged cooler seals to prevent any warm air from entering the freezer and freezing/damaging the food or equipment.
Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed a build up of dust on the walk in freezer vent guards. Clean to prevent dust from contaminating foods in the walk in freezer.
Nonfood-contact surfaces of equipment shall be kept clean.
3717-1-05.4(N) / Covering receptacles.
Observed a lid on the dumpster was damaged. Contact the dumpster company to have the lid replaced. This will prevent any pest from harboring.
Receptacles and waste handling units for refuse, recyclables, or returnables shall be: kept covered inside the FSO or RFE if they contain food residue and are not in continuous use, and after they are filled; or with tight-fitting lids or doors if kept outside.
3717-1-06.1(I) / Light bulbs - protective shielding.
Observed a light bulb above the dry storage area that was not properly shielded. Replace the shield to prevent the lights from being broken/shattered during cleaning or operation.
Light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, or linens, or unwrapped single-service or single-use articles and does not apply in areas used only for storing food in unopened packages. An infrared or other heat lamp shall be protected against breakage by a shield surrounding and extending beyond the bulb so that only the face of the bulb is exposed.
3717-1-06.2(C) / Handwashing sinks - hand drying provision.
Observed that the restrooms were not properly stocked with paper towels. Keep restrooms fully stocked with soap, warm water, and paper towels to promote proper hand washing.
To prevent contamination by hands, each handwashing sink or group of adjacent handwashing sinks shall beprovided with: Individual, disposable towels; a continuous towel system that supplies the user with a clean towel; a heated-air hand drying device; or a hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures.
3717-1-06.4(A) / Repairing.
Repeat Observed tiles throughout the facility that were damaged including some of the cove molding tiles. Replace damaged molding to prevent mop water from entering the walls and causing damage to the building. Observed some sinks with damaged caulking holding them to walls. Recaulk damaged caulking for any wall mounted equipment. This will allow easy cleaning.
The physical facilities shall be maintained in good repair.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Repeat Observed a build up of grease and food debris throughout the facility including but not limited to: -behind the grill -around the fryers -underneath/near the soda fountain drains CLEAN THOROUGHLY AND OFTEN TO PREVENT DEBRIS BUILD UP.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
