3717-1-04.4(J) / Mechanical warewashing equipment - wash solution temperature.
Critical Observed the temperature of the dish tak at 106 degrees at a concentration of 50 ppm chlorine. The temperature of the wash solution in spray-type warewashers that use chemicals to sanitize may not be less than 120°F.
To ensure proper cleaning and sanitization, the temperature of the wash solution in spray type warewashers that use hot water to sanitize may not be less than: (a) For a stationary rack, single temperature machine, 165°F; (b) For a stationary rack, dual temperature machine, 150°F; (c) For a single tank, conveyor, dual temperature machine, 160°F or (d) for a multitank, conveyor, multi-temperature machine, 150°F. The temperature of the wash solution in spray-type warewashers that use chemicals to sanitize may not be less than 120°F.
3717-1-07.1(A) / Poisonous or toxic materials: Storage: separation.
Critical Observed fly strip stored above salsa table. Employee removed fly paper and threw it in the trash. No storage of toxic materials such as fly paper may be stored above food/food contact surfaces to prevent contamination.
To prevent contamination, poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, or single-service or single-use articles by: 1) Separating the poisonous materials by spacing or partitioning; and 2) Locating the poisonous or toxic materials in an area that is not above food, equipment, utensils, linens, single-service articles or single-use articles. .

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Observed a build up of dirt and food debris on non food contact items including shelves of reach in freezers, fans in walk in cooler, and lower shelves of stainless tables. Clean these areas regularly to prevent build up of debris,
Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
3717-1-06.4(N) / Maintaining premises - unnecessary items and litter.
Observed unnecessary or nonfunctional items and /or litter on the premises. Old prep cooler (broken) stored in storage room with reach in freezers. Unused deli slicer and other unused items observed in storage. Remove unused items from the facility to reduce clutter, prevent harborage conditions for pests, and reduce the number of areas to be cleaned.
The premises shall be free of Items that are unnecessary to the operation or maintenance of the FSO or RFE such as equipment that is nonfunctional or no longer used and litter.
3717-1-07.1(J) / Restricted use pesticides - criteria.
Observed an unapproved restricted use pesticide being used. Only oesticides applied by the LicensedPest Control operator are allowed to be used in this facility. Remove household pest control chemicals from the premises.
To prevent contamination, restricted use pesticides shall meet the requirements specified in 40 C.F.R. 152 Subpart I and be applied as specified under paragraph (C)(3) of this rule.
