3717-1-03.2(H) / Ice used as exterior coolant - prohibited as ingredient.
Critical Corrected During Inspection Observed employee storing drink in ice. Ice used as exterior coolant cannot be used as a food to prevent any contamination from bottle to ice. Item was removed and ice replaced at the time of inspection.
To prevent foodborn illness, after use as a medium for cooling the exterior surfaces of food such as melons or fish, packaged foods such as canned beverages, or cooling coils and tubes of equipment, ice may not be used as food.
3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Corrected During Inspection Observed mold along the inside of the ice machine flap. Clean the ice machine thoroughly and often to prevent this build up which may contaminate foods. At the time of inspection an employee used a rag to clean the bottom of the flap.
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch.
3717-1-07(B) / Poisonous or toxic materials: Working containers - common name.
Critical Corrected During Inspection Observed an unlabeled chemical bottle at the facility. Discarded at time of inspection. Label all foods and chemicals to prevent their misuse.
To prevent health hazards, working containers used for poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material.
3717-1-07.1(A) / Poisonous or toxic materials: Storage: separation.
Critical Corrected During Inspection Observed chemical bottles hung from a shelf next to clean rags and above the hand washing sink. Store chemicals in an area where they cannot accidentally spray or contaminate the hand sink, food, or clean utensils/rags. At the time of inspection these bottles were moved from the shelf to the floor or hanging from the trash can.
To prevent contamination, poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, or single-service or single-use articles by: 1) Separating the poisonous materials by spacing or partitioning; and 2) Locating the poisonous or toxic materials in an area that is not above food, equipment, utensils, linens, single-service articles or single-use articles. .

3717-1-04(A) / Multiuse utensils and food contact surfaces - material characteristics.
Observed plastic rubbermaid containers used to hold foods that were not food grade in the reach in freezer. All containers for foods shall be food grade so that they can withstand repeated cleaning without cracking, breaking, and do not impart tastes into the foods.
To prevent contamination, materials that are used in the construction of utensils and food contact surfaces may not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions shall be: Safe; durable, corrosion-resistant, and nonabsorbent; Sufficient in weight and thickness to withstand repeated warewashing; finished to have a smooth, easily cleanable surface; and resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.
3717-1-04.2(H)(2) / Temperature measuring devices - mechanical warewashing.
Observed that the facility did not have an irreversible method of measuring the dish machine temperature. Purchase a maximum registering thermometer or dishmachine T-160 test strips which turn colors as long as a temperature of 160 F has been reached.
A temperature measuring device is essential to monitor mechanical ware washing to ensure sanitization.
3717-1-06.1(A) / Floors, walls, and ceilings.
Observed that the base coving and tiles around the facility were damaged. Ensure that floors and walls are smooth and easily cleanable. Ensure that wall/floor junction is coved to prevent mop water from damaging the studs or drywall.
Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable.
