3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Observed food that was not properly protected from contamination by separation, packaging, and segregation. Observed bowl of sauce stored directly on top of raw chicken. Keep bowls on top shelf and chicken on botttom shelf covered with overwrap to prevent contamination.
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule.

3717-1-04.5(C) / Cooking and baking equipment - cleaning frequency
Cooking and/or baking equipment is not cleaned at the required frequency. Observed build up of dirt and food debris on sides, handles, and other nonfood contact surfaces of equipment. Clean more frequently so equipment is clean to sight and touch.
Cooking and baking equipment and/or cavities and door seals of microwaves shall be cleaned at least every twenty-four hours.
