3717-1-03.2(N)(1) / Gloves - use limitation
Critical Repeat Single-use gloves used improperly.Observed employee touch raw chicken with gloves on, then taking them off and putting on new gloves and cutting a pizza. Between gloves all employees should wash hands before moving to another task and putting on new gloves. Employees need proper glove and handwashing training.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed pizza prep cooler at 50-52 degrees. All TCS foods need to be held at 41 degrees or below. PIC discarded food that was out of temperature.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed cut deli meats with no date markings. all TCS RTE foods need to be date marked for 7 days. Add Date stickers to all TCS RTE foods.

3717-1-02.3(A) / Food contamination prevention - eating, drinking, or using tobacco.
Repeat Observed drinks and personal affects in food prep areas. Code states drinks and personal affects must be stored in a designated area to avoid contamination. Make sure to keep drinks in a designated employee area.

3717-1-03.2(R) / Food storage - prohibited areas.
Corrected During Inspection Food stored in prohibited area. observed TCS food sitting on side trays of the 3 compartment sink. Food needs to be stored in a location that will contaminate the food. PIC Moved the food.

3717-1-04.1(A) / Equipment and utensils - durability and strength.
Nondurable equipment observed. Observed duct tape in 2 locations around dish washing machine. Repairs need to be made with safe durable materials. Remove tape and repair equipment properly.
