3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding.
Critical TCS foods not being hot held at the proper temperature. Chicken noodle soup left in soup kettle overnight. Kettle was turned off, and soup was holding at 68 F. Hot holding is 135 F. Do not leave food in a soup kettle overnight. Voluntarily discarded.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Sliced ham was past his date mark. Date mark ready to eat TCS food for 7 days. After 7 days it must be discarded. Ham was voluntarily discarded.

3717-1-06.2(E) / Handwashing signage.
Handwashing sign(s) not posted. Observed hand washing signs lacking in both restrooms. Hand washing signs are required by any sink that is used by employees.

3717-1-06.2(C) / Handwashing sinks - hand drying provision.
Corrected During Inspection No towels or drying device at the handwashing sink(s). Observed paper towels lacking at the hand sink. All hand sinks must be supplied with an approved method to dry hands at all times.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Repeat Non-food contact surface(s) not cleaned at the required frequency. Observed the inside of the white refrigerator was not clean to sight and touch. Clean as often as necessary.
