Observed a build-up of dirt and debris. Wall behind prep table accumulating splash debris from sauce. High part of wall by pizza oven not cleaned as frequently as rest of hood area. Floors in walk in accumulating some debris.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
