Critical Corrected During Inspection Quat sanitizer used in salad / server area observed in strong concentration of 500ppm or above. Use at 200-400 ppm as indicated by manufacturer.
A quaternary ammonium sanitizing solution shall: (a) Have a minimum temperature of 75F,(b) Have a concentration as specified and as indicated by the manufacturer's use directions included in the labeling.
3717-1-07.1(A) / Storage: separation.
Critical Observed improper storage of poisonous or toxic materials on shelf above dish line that may exposed equipment and utensils to possible chemical contamination. Store all chemicals in a location where chemical contamination of food, utensils, or equipment is not possible.

Observed employee drinks stored in food prep areas and drinks were not in closed container. .
To ensure proper hygiene, an employee shall eat, drink, or use tobacco only in designated areas where the contamination of exposed food; clean equipment, utensils or linens; unwrapped single service or single use articles; or other items needing protection cannot result.
