3717-1-04.4(B) / Cutting surfaces.
Repeat Observed the cutting board on the pizza prep cooler to be scoured and stained. Please ensure that these stains can be lifted from the cutting board and scours are sanded down to maintain a cutting surface that can be effectively cleaned. If stains and scours are unable to be removed, a new cutting board shall be used.
Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.
3717-1-06.4(A) / Repairing.
Observed broken floor tiles around the kitch area. Please ensure that the physical facilities are maintained in a state of good repair to ensure proper cleaning of floors.
The physical facilities shall be maintained in good repair.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of grease, food debris, and dust in the hard to reach areas underneath the fryer, grill, and pizza oven. Please ensure that this area is cleaned at a frequency necessary to prevent a buildup of grease, food debris, and dust.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.

Observed proper used of gloves at time of inspection. Observed thermometer available for use. Facility had test strips, but they were wet and no longer effective. Please ensure that the facility has usable testing devices to ensure proper sanitation of dishtank. Overall cleanliness much improved. Pest control in place - good.
