Critical Observed dirty fryer baskets with significant grease build up and tea canister with tea build up on the inside. All food contact surfaces need to be clean to sight and touch. Clean food surfaces more frequently to prevent build-up.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed dirty floors throughout FSO. Clean floors throughout FSO especially under equipment and around wheels and feet of racks.

3717-1-06.2(I)(3) / Lighting - intensity (50 FC)
Observed lights burnt out in hood above fryers. Replace light bulbs so that you have 50 FC in food prep location.
