3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Critical Corrected During Inspection Quat sanitizer solution observed slightly strong in concentration, greater than 400ppm.
Use sanitizer at 150 ppm to 400 ppm as recommended by manufacturer. Typically, tablet sanitizer is to be used one tablet per gallon of water. Use strips and read directions for proper use of strips to check concentration.
3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Underside area of shake blender soiled with food debirs. Undeside of soda fountain has accumulation of residue on one side and in ice chute. Clean these areas frequently to prevent such accumulation.
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch.

3717-1-07.1(J) / Restricted use pesticides - criteria.
Observed an unapproved pesticide on floor near walkin cooler.
Pest control applied in food service shall only be by a licensed pest applicator. Store and keep all household pesticides outside of food establishment to prevent contamination of food or equipment.
