[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1) / Time/temperature controlled for safety food - hot and cold holding.
Critical Observed deli meats and cheeses in the deli cooler holding from 45-49 F during the inspection. The cooler appeared frozen and was holding an ambient temperature of 48-50 F. Foods were discarded or reconditioned as appropriate.
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less.

3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Observed that the deli cooler had ice build up on the condenser and was holding an ambient temperature of 48-50 degrees ambient temperature. Coolers shall be maintained in good repair to prevent any foods from being temperature abused.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
3717-1-06.1(C) / Floor and wall junctures - coved, and enclosed or sealed.
Observed areas around the facility that were not properly coved. All floor wall junctions shall be coved to prevent any damage during mopping and allow easy cleaning.
In FSO's or RFE's in which cleaning methods other than water flushing are used for cleaning floors, the floor and wall junctures shall be coved and closed to no larger than one thirty-second inch; where water flush cleaning methods are used, shall be provided with drains and be graded to drain, and the floor and wall junctures shall be coved and sealed.
3717-1-06.4(L) / Removing dead or trapped birds, insects, rodents, and other pests.
Observed dead pests in the backroom around the back doors and under the shelving. Dead pests shall be removed frequently and often.
Dead or trapped birds, insects, rodents, and other pests shall be removed from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests.
