Observed area beneath egg and butter display case that had accumulation of residue and liquid/debris that appears to accumulated from cleaning spills at the egg case. Employee began to clean at time of inspection. Clean all hard to reach areas of food display cases routinely to prevent accumulation of debris/liqud from spills to prevent odors and accumulation of debris. Physical facilities shall be cleaned as often as necessary to keep clean.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.

Operation has continued to clean and maintain areas where seweer back-up had occurred in July. Observed areas under display cases where sewage back-up occurred kept clean and no signs of food debris or liquid. Continue to clean and maintain areas where sewage back-up occurred to prevent odors. |
