Comments
At time of inspection, the following violations were observed:
-Ice machine needed cleaning. Contact surface was visibly soiled. Increase cleaning frequency.
-Several employees who were prepping salads and in grill area did not have hair nets, hats, or hair pulled back. Please ensure that all employees restrain hair when doing food prep.
-Employee did not was asparagus before cooking. Asparagus package did not state that it was pre-washed. Discussed with employee.
-Cutting board by grill area was no longer easily cleanable. Resurface or replace.
-Significant build-up of debris throughout kitchen including dust above salad prep area on ceiling, top of dishwasher, floors throughout facility, especially under equipment and racks, inside reach in coolers. Please clean entire kitchen with focus on the aforementioned areas.
-Ice build up in walk-in freezer. Repair to prevent leak.

Please review with all employees: when to wash hands. Several employees were observed leaving the kitchen and not washing hands upon re-entry.
