[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection Observed egg mixture and mixed greens that were being cold held at 55 degrees F. All TCS foods shall be cold held at forty-one degrees or below. Ensure all coolers are maintaining appropriate temperatures to cold hold TCS food appropriately. Food was voluntarily discarded and the cooler was adjusted to the proper temperature. Also observed both doors to walk-in cooler open multiple times throughout inspection. Food was still at proper temperature. Doors must remain closed on all coolers.

3717-1-04.8(E)(2) / Clean equipment and utensils stored in a self-draining position and covered or inverted.
Observed wet metal bowls and pans stacked upon each other without being able to air-dry. Clean equipment and utensils shall be stored in a self-draining position that allows air-drying. Do not stack equipment and utensils before being allowed to completely air-dry.

3717-1-05.4(N) / Covering receptacles.
Observed bathroom used by females that did not contain a covered waste receptacle. All bathrooms that are used by females must contain at least one waste receptacle with a tight-fitting lid. Replace current waste receptacle with a covered bin or add a lid to the existing waste receptacle.
