Observed ham and some soups and sauces not date marked after opening or preparation and in storage. Date mark all tcs food upon preparation or in storage so food can be used or date marked 7 days after opening. Observed some sauces and food items with expired dates, products were items prepared in house and are ready to eat. Includes thousand island dressing, gumbo sauce, chipino sauce, pineapple salsa, and jumbalaya sauce
