3717-1-05.1(D) / Backflow prevention - air gap.
Critical Observed that the prep sink in the bakery area had an air break rather than an air gap. Discussed proper air gapping with the PIC. Properly air gap the sink to prevent sewage backflow from contaminating foods.
To prevent contamination, an air gap between the water supply inlet and the flood level rim of the plumbing fixture, equipment, or nonfood equipment shall be at least twice the diameter of the water supply inlet and may not be less than one inch (25 millimeters).
3717-1-08.3(H) / Special requirements: bulk water machine criteria - Sampling
Critical Observed a glacier bulk water machine, but the managers did not have any total coliform sampling results on hand. Bulk water machines shall have their water sampled twice annually for total coliform bacteria. Contact the contractor for the bulk water machine and ensure that they are properly sampling their bulk water machine at least twice per year.
3717-1-02.4(A)(2) / Person in charge: assignment of responsibility.
Observed that the facility had an individual who had a level 2 food safety training, but was unaware of state approval. Inspector will email the ODH reciprocity form to the facility with the inspections. Facility shall have at least one management staff with state approved level 2 food safety training.
At least one employee that has supervisory and management responsibility and the authority to direct and control food preparation and service shall obtain the level two certification in food protection according to rule 3701-21-25 of the Administrative Code.
3717-1-06.1(M) / Outer openings - protected.
Observed some of the loading bay doors did not fully shut. Ensure that all outer openings are properly protected with weather stripping or air curtain to prevent pests such as insects or rodents from entering the facility.
To prevent contamination, outer openings of an FSO or RFE shall be protected against the entry of insects and rodents as specified in this rule.
