Repeat Observed the swath where the tiles were missing had not been repaired. REPAIR TILES TO PREVENT FURTHER DAMAGE TO THE FLOOR WHICH ACTS AS A TRIPPING HAZARD FOR STAFF AND COLLECTS DIRT. ALL FLOORS, CEILINGS, AND WALLS SHALL BE MAINTAINED SMOOTH AND EASILY CLEANABLE.

FOLLOW UP INSPECTION FROM THE PREVIOUS INSPECTION ON FEB 13TH.

Went over the report with the PIC. At the time of inspection the facility had changed its process for holding of the foods that were not holding proper temperature. The facility was using metal pans and ice in a large pan to hold foods at the proper temperature. During the inspection the diced tomatoes on the dumpster fry cooler were holding 41F. The sliced tomatoes on the pizza cooler were holding 35F on ice in a larger pan. The fried chicken and ranch souffles were holding 43F. Previous temperature violation has been closed, continue to monitor line temperatures and maintain foods at 41F or below to prevent temperature abuse.

Facility still has not repaired the tile in the kitchen where the drain line was replaced. Facility shall repair tiles to prevent dirt or debris from becoming stuck and prevent further damage to tile as water and grease cause damage to the open tiles.
