Critical Observed no date-marking on items that are stored for more than 24 hours or pulled from thawing. No food is kept longer than 3 days in facility. Please be sure to indicate a date on food that is stored longer that 24 hours so that no item is kept longer than 7 days by law.
To prevent foodborne illness, refrigerated, ready-to-eat, TCS food held at a temperature of 41°F or less for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day, that is a maximum of seven days, by which the food shall be consumed, sold, or discarded. Observed test strips and thermometers available for use. Proper use of gloves at time of inspection. Level II ODH certificate obtained - good. Vomit/diarrheal procedure in paced - good. More ice was added to salad bar - good. Temp was starting to warm.
