Critical Corrected During Inspection Foods from unapproved sources. Eggs from unapproved source found in reused store cartons in fridge. Eggs must come from approved source with correct packaging. Eggs were discarded.

3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation.Deli meat was found stored on top of packages of raw bacon in fridge and prep cooler. Ready to eat foods must be seperated from raw animal product. Also obsvered eggs stored above ready to eat foods. Eggs are considered a raw animal product. Both were corrected.

3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Observed ice bin at bar in need of cleaning. Black substance found. Make sure ice machine is cleaned at a frequency that prevents buildup of debris.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Deli meats pulled from freezer not being date marked. Once ready to eat foods are thawed, they have 7 days to be used. Observed chicken salad without datemarking as well.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Non-food contact surface(s) not cleaned at the required frequency. Budweiser cooler in need of cleaning behind bar. Make sure all surfaces are cleaned at a frequency that prevents buildup.

3717-1-06.4(D) / Cleaning ventilation systems, nuisance and discharge prohibition.
Fan above hand sink in need of cleaning. Fans must be cleaned at a frequency that prevents build up of debris.

3701-21-25(I) / Person in charge certification in food protection
FSO did not have a person in charge per shift with the person in charge certification in food protection. Please make sure one person per shift is certified infood protection.
