Observed open package of fries in a freezer under a broken lid with crumbling, exposed insulation. Employee corrected during inspection by moving it to another freezer. To prevent contamination, food must be stored away from sources of contamination.

Employee health policy in place. Discussed with manager about sending "verifiable proof" to our office. Observed proper use of gloves and proper hand washing. PIC was able to adequately demonstrate knowledge of food safety and explain procedure used for time in lieu of temperature. Discussed with manager about sending our office a copy of the ODH level 2 food safety certificate when received. Observed proper holding temps. Facility has a spill kit and procedure available.
