3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed refrigeration trenches under freezers and beverage coolers with accumulation of waste water that appears to be from the sewage backup that occurred last week. The trenches are located below several cooling units such as beverage cooler and freezer units.
Clean and disinfect the refrigeration trenches to eliminate odors and remains of waste water to prevent further problems, health and safety issues, and strong odors. Operator voluntarily closed areas being maintained during inspection until completely cleaned and disenfected. The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.

Conducted an inspection in result to complaints reported to our office that the dairy section has strong sewer gas or sewer odors. During inspection, the facility is still in process of cleaning areas from the sewage backup that occurred July 19th or 20th. According to our inspection report from July 20, 2017 a sewer drain maintenance was being performed that resulted in sewer backup onto floor in area of dairy section. During July 27th inspection, observed liquid wastes being pumped from a refrigeration trench which is below the floor in the dairy, freezer, and beverage isles and being pumped into sanitary sewer which appears to be causing the odors. Strong odors of sewage observed in areas around the refrigeration trenches that appear to be from the remaining liquid wastes in the trenches. During inspection, facility in process of cleaning the trenches. Management voluntarily closed the area during the inspection so detailed cleaning and disinfection can be completed to eliminate odors and remains of sewage waste in trenches. Recommend keeping area closed to public until all remaining refrigeration trenches are cleaned and disinfected to eliminate odors and possible health hazard. Our office will conduct a follow-up inspection on July 28, 2017 to re-assess the clean up.
