Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed raw bacon stored above ready to eat chicken. Raw animal product must be stored below ready to eat foods. Chicken was discarded.

3717-1-04.5(B)(1) / Equipment food-contact surfaces and utensils - cleaning frequency.
Critical Observed canopener in need of cleaning. Food contact surfaces must be cleaned at a frequency that prevents build up of contaminants.

3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding.
Critical Corrected During Inspection TCS foods not being hot held at the proper temperature. Observed Chili heald at 124.5 degrees. Temps were not taken of foods throughout day. Chili was discarded.

Critical Repeat Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed many containers in walk in cooler and reach in prep cooler not datemarked or passed discard date. Food was discarded

Corrected During Inspection TCS foods not properly thawed. Foods were thawing in submerged water without running water. make sure foods are thawed in fridge or under cold running water.

3717-1-04.4(S)(1) / Single-service articles and single-use articles - use limitation.
Re-use of single-service or single-use articles. Observed sauce cup used as scoop in relish. Single use items cannot be reused.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Non-food contact surface(s) not cleaned at the required frequency. Hoods above grill in need of cleaning. Make sure hoods are cleaned so they are without buildup of dust debris.
