3717-1-04.4(N)(1) / Manual and mechanical warewashing equipment, chemical sanitization (chlorine) - temp., pH, concentration, and hardness
Critical Corrected During Inspection Chlorine sanitizing solution at incorrect temperature and/or concentration. Observed bar sink sanitizer above 200 ppm. PIC drained sink and set it up with much less chlorine added.

3717-1-06.4(A) / Repairing.
Corrected During Inspection Physical facilities not maintained in good repair. Observed Ice build up in the walk in freezer. Ice melting could cause contamination of food. Maintenance is needed. PIC moved food to prevent contamination.

3717-1-06.4(J) / Using dressing rooms and lockers.
Corrected During Inspection Observed personal items and jackets in multiple locations in the kitchen. All employee possessions need to be stored in a location to prevent contamination away from food prep areas.
