3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Observed food that was not properly protected from contamination by separation, packaging, and segregation. Observed ham and cheese stored in cooler not properly covered to prevent contamination. Keep items in plastic container or sealable plastic bag.
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule.
3717-1-04.5(B) / Equipment food-contact surfaces and utensils - cleaning frequency.
Critical Food equipment surfaces are not cleaned at the required frequency. Observed capaccino machine dispenser and nozzles accumulating debris and slushy machine accumulating debris and mold build up. Nozzles of beverage dispensers must be cleaned and sanitized daily to prevent build up of debris and mold.
Equipment food-contact surfaces and utensils shall be cleaned at a frequency specified in this rule.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Observed improper storage of food items. Observed bag of pop stored on floor in storage room. Must be stored 6 inches off floor ro protect from contamination by the premises.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor.
3717-1-04.8(F) / Storage - prohibitions.
Cleaned and sanitized equipment, utensils, laundered linens, or single-service articles or single-use articles were stored in a prohibited area. Observed single use items stored under hand washing sink and being dripped on, causing contamination. Move single use items to another shelf or cabinet so thet are not being contaminated by the premises.
Equipment, utensils, laundered linens, or single-service articles or single-use articles may not be stored in the areas specified under this rule where contamination might occur.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Corrected During Inspection Observed a build-up of dirt and debris. Observed a build up of ice in walk in freezer.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
