Critical Food equipment surfaces not cleaned at required frequency. Observed can opener with build up of debris. Make sure can opener is cleaned at a frequency that prevents buildup of food or debris.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed guacamole and sour cream at waitress station temping at 50 degrees. Make sure lid is kept closed on station to maintain temp. Food ws discarded.

Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed container of sliced mushrooms stored well above fill line in prep cooler next to grill ( container was resting in another container on top of cut peppers.) Mushrooms temped at 50 degrees. They were discarded.

Non-food contact surface(s) not cleaned at the required frequency. Observed dirty racks throughout kitchen where clean dishes are stored. Make sure all racks are cleaned so that there is not a buildup of debris.

Non-food contact surface(s) not cleaned at the required frequency. Observed racks that hold dishes through dishtank with an egregious amount of dirt/food/mold like substance. Make sure anything that is holding clean dishes are clean to sight.

Observed vents in kitchen on ceiling in need of cleaning. Box fan used in kitchen found with a lot of dust build up. Make sure all ventilation systems are cleaned so that they are not blowing dust and debris all over kitchen.
