Repeat Observed a build-up of dirt and debris. In the pop room observed soda build up on the walls, dirt and debris on the floors and in hard to reach areas. Clean hard to reach areas more frequently to prevent build up of food and debris. Also clean behind the fryers. More frequent cleaning of hoods.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. Correct By: 23-Sep-2014
