Critical Repeat Observed Raw Bacon being stored on top pf ready to eat meats. Make sure raw animal products are stored seperate or below ready to eat foods.

3717-1-04.4(N)(1) / Manual and mechanical warewashing equipment, chemical sanitization (chlorine) - temp., pH, concentration, and hardness
Critical Chlorine sanitizing solution at incorrect concentration. Observed employee not using sani-tabs while doing dishes. She expressed she did not know how to make up the solution. I pointed out the directions on back of bottle for her. Please ensure all employees know how to make up sanitizer solution for dishes.

3717-1-02.4(C)(17) / PIC: duties - ensure the facility has written procedures for responding to vomiting and diarrheal events.
Repeat No written procedures for responding to vomiting or diarrheal events. Code states such policy should be written out.

Repeat No protective shielding on lights above cooler in kitchen. Code states all lights have protective sheilding. Please replace shielding.
