3717-1-03.2(C)/Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Observed raw animal product stored above reday to eat foods. Bacon and pork loin. Make sure raw animal products are stored below all other foods.
3717-1-03.4(G)/Ready-to-eat, time/temperature controlled for safety food - date marking.
Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed lack of datemarking in reach in cooler in back storage. Make sure all RTE TCS foods are datemarked.
3717-1-06.1(M)/Outer openings - protected.
Outer opening not protected. daylighting observed around back door, believe it to be where flies and mice can get in. Make sure there are no gaps in door.
3717-1-06.4(K)/Controlling pests.
Observed mouse droppings on floor under and behind shelves. Establishment has exterminator and bait traps. Owner believes they are old droppings. Must all be cleaned up before reinspection.

Personal employee food not segregated from commercial food. All employee food must be seperated from commercial foods.

Freezer is broken, foods inside were thawed but not above 41 degrees. DO NOT use freezer until fixed, was told parts were on order. Foods thawed were to be datemarked and moved to the cooler.
3717-1-06.4(N)/Maintaining premises - unnecessary items and litter.
Unnecessary or nonfunctional items and /or litter on premises. A lot of personal items/unused items stored in back storage. This causes harborage conditions for mice. Must have all unnecessary items removed from store by next inspection.
