3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Observed cut lettuce in the reach in cooler in the kitchen without a date mark. All refrigerated, TCS, ready to eat foods must be dated to indicate the day by which they must be consumed or discarded, not to exceed 7 days from the day it was opened or prepared. Lettuce was discarded at the time of inspection.

3717-1-04.4(S)(1) / Single-service articles and single-use articles - use limitation.
Observed plastic butter container being re-used for food storage in the reach in cooler. Single use containers are not designed to be durable enough for repeated use.

3717-1-04.1(A) / Equipment and utensils - durability and strength.
Observed cut lettuce stored directly in a paper bag. All equipment and utensils must be designed to be durable, easily cleanable, and non absorbent.

Facility's facebook page states there is a $5 dinner every Friday night and serves items such as meatloaf, jambalaya, chicken pot pie, and stir fry. NO FOOD MAY BE COOKED AT HOME AND BROUGHT IN TO SERVE TO THE PUBLIC. ALL FOOD MUST BE PREPARED ENTIRELY AT THE LICENSED FACILITY AND ALL FOOD SAFETY RULES FOLLOWED.
