3717-1-07.1(A) / Poisonous or toxic materials: Storage: separation.
Critical Repeat Corrected During Inspection Observed a spray bottle of chemical stored on the shelf above the boxes and area for cutting pizzas. At the time of inspection this chemical was moved. DO NOT STORE CHEMICALS IN AREAS WHERE CONTAMINATION MAY OCCUR DUE TO LEECHING OR SPILLING.
To prevent contamination, poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, or single-service or single-use articles by: 1) Separating the poisonous materials by spacing or partitioning; and 2) Locating the poisonous or toxic materials in an area that is not above food, equipment, utensils, linens, single-service articles or single-use articles. .

At the time of inspection the facility had corrected all of the previous violations not listed on this report. The facility was properly date marking its foods as required, the sanitizer was dispensing correctly, all chemical bottles were labeled, the was no build up of debris under the cutting boards or along the soda nozzles in the dining area.

During the inspection the facility had 0-1000 ppm quaternary ammonium test strips and was unable to correctly identify that the sanitizer was dispensing between 200-400 ppm. With use of 200-400 strips is was evident that the sanitizer was correctly set at approximately 300-350 ppm of Quaternary Ammonium sanitizer. While 0-1000 ppm strips will work, recommend a smaller range such as 0-400 or 0-500.

Previous violations have been corrected.
