3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Observed chicken wings in reach in cooler not date marked after thawing. Per code all RTE/TCS foods kept for longer than 24 hours shall be date marked. PIC dated product at time of inspection.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed dust/debris build up around cookie oven & on sandwich oven. Per code nonfood-contact surfaces shall be mainted clean to sight and touch.

3717-1-06.4(F) / Drying mops.
Observed mops left to sit in bottom of mop sink. Per code mops shall be hung to dry to prevent contamination.
