When questioned, PIC does not have an employee health policy in place. Employees must be informed in a "verifiable manner" of the health policy and when to communicate health information to the person-in-charge. This serves to protect public health and minimize risk of food borne illness to the public.

VI / Time/Temperature Controlled Safety Food
Observed a bag of shredded cheese without a date mark.Also observed unclear system for date marking of yogurt parfaits and tuna salad. All TCS foods must be clearly marked with a date to indicate the day by which it must be consumed or discarded.
