Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation.Observes raw sausage stored above RTE foods. All raw meat needs to be stored below RTE foods. Kitchen member moved sausage to bottom shelf.

3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Equipment food-contact surfaces or utensils are unclean. Inside of microwave and Ice machine having build up of dirt all food contact surfaces must be clean to sight and touch. Clean more frequently to prevent build up.

3717-1-05.1(C)(1) / Handwashing sink - required water temperature
Handwashing sink water below 100°F. Observed a hand sink in the kitchen area that did not have hot water. 100 F water is required at all hand sinks.Repair sink to have hot running water.

3717-1-04.1(Y) / Temperature measuring devices.
Repeat Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. Observed prep cooler not having a thermometer.All cooling equipment capable of holding TCS foods must have a device capable of accurately measuring internal temperatures.

Received a complaint about potential rodent and insect problem in the facility. I did not find any insect issues or rodents. Spoke with owner, He stated that they have had some issues near the back door with roaches but they have Spires pest control out frequently and the bugs have not been seen recently.
