Critical No person in charge present in food facility during inspection. Manager was called in.

3717-1-03.3(H) / Reheating for hot holding.
Critical Corrected During Inspection Improper reheating of food for hot holding. Food is to be reheated to 165 degrees rapidly with the time in between 41 to 165 being less than 2 hours. Mashed potatoes temped at 110 degrees after 3 hours. Potatoes were reheated to 165 in microwave.

Critical Repeat TCS foods not being cold held at the proper temperature. Observed food in prep cooler in back of kitchen next to fryers temping at 55 degrees. All cold holding is to be held at 41 degrees or lower. Food was discarded. Do not use cooler until it is repaired.

Corrected During Inspection Observed employees storing personal items on prep counter (phone, cigs, chapstick,) as well as storing purse in a clean mixing bowl on shelf. All personal items are to be stored in a way that is away from food prep and clean equipment. Items were moved.
