[?] A summary of the violations found during the inspection are listed below.

Critical Repeat Observed multiple TCS foods that were not holding the proper temperature. During the inspection these items were discarded. FACILITY SHALL MAINTAIN ALL COLD ITEMS AT 41F OR BELOW TO PREVENT TEMPERATURE ABUSE. Discussed using time as public health control or otherwise maintaining temperatures. Facility replaced the foods with deep pans on ice. Observed a container of garlic spread stored at room temperature despite stating keep refrigerated. Provide proof that the food is shelf stable or maintain it at the proper temperature of 41F or below.

Critical Repeat Observed gorgonzola at 53.7F, Cheddar at 50.1, and Lettuce at 48.5 in the salad and dumpster fry prep coolers. MAINTAIN ALL COLD FOODS AT 41F OR BELOW TO PREVENT BACTERIA GROWTH. During the inspection temperature abused foods were discarded.

Observed that the prep cooler was frozen up at the facility. Maintain equipment in good repair to prevent it from causing temperature abuse to foods.

At the time of inspection the facility was continuing to have cold holding issues with the foods in its two prep coolers. During the inspection the temperature abused products were discarded. The facility had a HVAC employee who was working on the small dumpster fry cooler at the time of inspection. The cooler was repaired to hold an internal temperature of 37F. The foods from this cooler had been temporarily moved to a pan of ice or the drawers under the grill and were holding the proper temperature during the inspection.

Moving forward the facility was instructed which food require temperature control and which do not. Maintain all foods requiring temperature control (Cheese, Cut leafy greens such as lettuce, diced tomatoes, and boiled eggs) MUST be kept at 41F or below. Failure to correct repeated temperature control violations shall result in referral to enforcement.

Observed that the catch sewer grate had been cleaned. Continue to keep an eye on and maintain the storm sewer so that not debris from the dumpster collects there. Grey water cannot be flushed down a storm sewer.
