Critical There was no employee health policy available at the time of inspection. Employees must be informed in a verifiable manner of their responsibility to report their symptoms and illnesses as they relate to food borne diseases. Inspector gave PIC an appropriate employee health policy to use if they wish.
3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Critical Corrected During Inspection Observed concentration of quaternary sanitizer to be about 500 ppm. According to bottle, concentration must be between 200-400 ppm for proper sanitizing of food contact surfaces. Corrected during inspection- concentration reduced to 300 ppm.
3717-1-03.4(I)(1) / Time as a public health control - written procedures
Facility uses time as a public health control without temperature for their milk in the morning. Milk is moved from the fridge at 41F or lower at 6am opening and placed in an air pot on the counter until noon when the milk is disposed of and the container is cleaned. There was no written procedure available at the facility at the time of inspection. A wirtten procedure must be available at the facilty and also provided to the licensor (PCHD).
3717-1-04.1(Y) / Temperature measuring devices.
Corrected During Inspection Reach in coolers did not have a thermometer in them for measuring ambient air temperature. A thermometer must be placed in the warmest part of the unit to accurately measure temperature. Corrected during inspection- thermometers were placed in each unit.
