Observed bleach test strips available, but quatenary ammonia sanitizer is being used. Ensure the facility has proper test strips to accurately measure sanitizer concentration.
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided.

| Be sure to set 3 comp sink up to wash-rinse-sanitize. in order to properly clean and sanitize dishware and utensils. keep raw meat separate from lunch meat. 3 door cooler was not functioning at time of inspection. no tcs foods being stored. Increase concentration of quat sanitizer in 3 comp sink between 200-400ppm. |
