[?] A summary of the violations found during the inspection are listed below.

3717-1-05.1(S)(1) / Plumbing system - maintained in good repair.
Observed a hand washing sink that was not properly draining. At the time of inspection the manager took the sink out of service and used degreaser/drain cleaner to help alleviate the draining problem. Maintain hand sinks so that they do not overflow during normal use.

3717-1-06.1(C) / Floor and wall junctures - coved, and enclosed or sealed.
Observed that the facility had an area of the cove molding underneath the 3 compartment sink that was peeling away from the wall. Repair/caulk the hole to prevent dirt, debris, water, or pests from entering behind the wall.
In FSO's or RFE's in which cleaning methods other than water flushing are used for cleaning floors, the floor and wall junctures shall be coved and closed to no larger than one thirty-second inch; where water flush cleaning methods are used, shall be provided with drains and be graded to drain, and the floor and wall junctures shall be coved and sealed.

Went over report with the PIC. At the time of inspection the facility was stacking its tomatoes so that they were not stored over the top of the pan and causing temperature abuse. The new process used 4 tomatoes in each pan to prevent them from staying out of temperature. Observed all of the chili meat was properly date marked at the time of inspection. All previous critical violations have been corrected and closed.
