PIC-

At the time of inspection the facility was properly labeling foods to prevent them from exceeding 7 days. All hot and cold foods were holding the proper temperatures of 41F or below or 135F or higher. At the time of inspection previous violations had been corrected. The deli cooler at the facility was holding an ambient temperature of 42F despite the display stating the cooler was 34F. Recommended that the PIC keep an eye on the cooler to monitor temperatures and keep foods at the proper temperature.

During the previous inspection the inspector had completed a CCP, but the facility is an RFE. During this inspection the inspector discussed chili cooking and cooling with the facility. The facility was not currently preparing any Chili as this is reserved for cooler months. However, the processes described for cooling and reheating do not constitute violations.
