Corrected During Inspection Observed two bags of hard boiled eggs to have the incorrect date on them. Observed container of hamburger patties and a bag of sliced bologna to have no date on them.
Please ensure that all ready-to-eat TCS food that is stored in the facility for more than 24 hours has a date on the package to indicate the date of preparation and/or the date of discard in order to prevent the growth of harmful bacteria that causes foodborne illness. Employee tossed the hardboiled eggs, bologna, and hamburger patties. Corrected.

PIC demonstrated adequate knowledge of food safety concerning cooking temperatures, cooling procedures, reheating procedures, and thawing procedures. Employee explained that when dates are not on food, or they are incorrect, the facility tosses this food and replaces with fresh - good. Ensure that all employees are on the same page with date marking so that all areas of the facility are date marked. Employee health policy in place. Level II food safety certificate readily available, and a vomit/diarrheal written procedure is onsite.
