Chili was observed for process review. Facility cooks chili in bulk and cools and reheats for hot holding during the day. The bulk chili is divided into smaller portions once cooled and only small amount is reheated for hot holding. Chili obseved date marked. Recommend keeping records of chili cooling times to help demonstrate proper cooling times and temperatures as wells as reheating and other critical controls. |
