[?] A summary of the violations found during the inspection are listed below.

3717-1-04.4(N)(1) / Manual and mechanical warewashing equipment, chemical sanitization (chlorine) - temp., pH, concentration, and hardness
Critical Repeat Corrected During Inspection Chlorine sanitizing solution at incorrect temperature and/or concentration. Observed a spray bottle of sanitizer being above the required concentration of 50 to 100 ppm for sanitizing food contact surfaces. PIC dumped out half of the bottle and refilled it with water to obtain the proper concentration of chlorine for sanitizing.

3717-1-06.1(M) / Outer openings - protected.
Repeat Outer opening not protected. Observed a gap under the side door by the utility room. Install weather stripping of a sweep to eliminate the gap.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Single-service and single-use articles not protected from contamination. Observed boxes of napkins and paper towels stored on the floor. Store single service food contact items at least six inches off of the floor to prevent contamination from the premises, or while mopping.

3717-1-04.1(A) / Equipment and utensils - durability and strength.
Non-durable equipment observed. Observed holes in the drainboard on the dirty side of the three compartment sink. Water leaked through the holes and was being captured in a bucket underneath. Seal the holes so the bucket is not needed.
