[?] A summary of the violations found during the inspection are listed below.

3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Repeat Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed chicken stored above shrimp, chicken stored above vegetables, beef stored above shrimp, and fish stored above vegetables in the walk in cooler. Observed uncover wantons, spring rolls, chicken, and vegetables in the walk in cooler. Observed uncovered beef, shrimp, and chicken in the reach in freezer with frost build-up on them. Observed a box of crispy noodles open and uncovered under the prep table with a plastic glove in it.
PIC reorganized the walk in cooler in accordance with the proper storage order and covered all items in question with lids or cling wrap.
3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed pans of raw chicken, shrimp, and beef in the walk in cooler without date marking.
PIC date marked all items in question, and Mandarin handouts were emailed.

3717-1-02.4(A)(2) / PIC - Manager Certification
Repeat Facility does not have an employee with manager certification in food protection. Observed no employee with manager certification in food protection. PIC stated she took the class, but did not pass the exam.

3717-1-04.4(S)(1) / Single-service articles and single-use articles - use limitation.
Repeat Corrected During Inspection Re-use of single-service or single-use articles. Observed tin cans being re-used to store eggs, wooden skewers, and various utensils. Cans may not be re-used in this manner.
PIC had the cans discarded and utilized plastic containers for storage.
